Chef's Pan Size Guide: Small vs Medium vs Large

Choosing a pan size is less about "bigger is better" and more about how you cook on a normal weeknight.

Size names stay English sitewide: Small, Medium, Large.

Medium (28 cm) — the default for most kitchens

Diameter: 28 cm
Best if: you cook for 1–3 people most days, want one primary frying pan, and value versatility.

Medium is the size most home cooks should start with. Eggs, vegetables, a couple of chicken thighs, a steak — without overcrowding a small burner or heating empty acres of metal.

Small (26 cm) — tight burners and smaller portions

Diameter: 26 cm
Best if: you have a compact hob, cook mostly for one, or want a dedicated egg / side-pan next to a larger pan.

Small heats quickly and stays manageable on smaller rings. It's also useful as a second pan when Medium is already busy.

Large (30 cm) — batch cooking and bigger burners

Diameter: 30 cm
Best if: you cook for 3–5, batch-sear proteins, or have a wide burner that can support a larger base.

Large rewards cooks who routinely fill the pan. If your burner is small, a Large pan can heat unevenly at the edges — match pan size to burner size.

Simple decision tree

  1. One pan for everyday cooking? → Medium
  2. Mostly solo / small kitchen? → Small (or Medium if you still want headroom)
  3. Family batch sears / big hob? → Large
  4. Want coverage? → Medium + Small is a common pair
